Cranberry Pecan Muffins

2 c flour
3 tsp baking powder
½ tsp salt
¾ c white sugar
dash of cinnamon
1 egg
1 & ½ c milk
½ c applesauce (1 pot)
2/3 c craisins
2/3 c chopped pecans

Preheat oven to 400. Mix flour, powder, salt, sugar, and cinnamon. In separate bowl, mix egg, milk, and applesauce. Add wet mix to dry, being careful not to overmix. Fold in cranberries and pecans. Fill greased or muffin-liner’ed trays 2/3 full and bake for 25 minutes or until golden brown and a toothpick comes out clean.
